SABUDANA NEER DOSA / SABBAKKI NEER DOSA

Dosa/Dose is my favorite breakfast which I am ready to have 365 days without getting bored. It is one of the most common breakfast prepared in south India. There are many varieties and ways to prepare dosa, here is a recipe for Sabudana Neer dosa. The consistency of the batter for this dosa variety is vey watery and liquid hence the name neer dosa. "Neer Dosa", literally translates to "water dosa", in kannada Neer or Neeru means water. It is delicate, soft, and incredibly delicious. This recipe is of Sabudana Neer Dosa a variation to neer dosa. It's so light you'll finish it in one bite, So without wasting time let's get started...

SABUDANA NEER DOSA

Ingredients

2 Cups - Dosa Rice

3/4 Cup - Sabudana/Sabbakki

1 Tsp - Sesame Seeds

4 -5 Green Chillies (ground)

1 Tsp - Cumin Seeds

Salt to taste

Oil to make dosa

3 Cups - Water or as required

Method

Step 1

Wash and soak dosa rice for 5 hours and grind it into fine paste. Add salt to taste mix well, batter should be of dosa batter consistency and allow it to ferment for 8 hours.

Step 2

Wash & soak sabudana/sabbakki over night. Next morning slightly mash the soaked sabudana and add it to the rice batter.

Step 3

Add sesame seeds, ground green chilli paste, cumin seeds and add water little by little. Mix well to a flowing consistency (watery).

Step 4

Heat pan, pour and spread the batter like neer dosa. Add little oil & cover a lid and let it cook for 1 minute on medium heat.

Step 5

When you see the pearls of sabudana turn transparent take it out and serve it hot with Coconut chutney.

Notes

Stir the batter well every time you make dosa as rice in the batter tends to get thick and sit at the bottom of the vessel.

Cover the lid and cook dosa - Sabudana/sabbakki turns transparent when dosa is cooked.

The consistency of the batter should not be thick but it should be thin, watery & flowing. As only when the batter is in this consistency you will get the tiny holes and lacy texture of neer dosa.

If the batter is thick then you will see cracks in the dosa and if the batter is too thin/liquid then it will break / stick while lifting, so if the batter is thick then add little water & if the batter is too thin/liquid then add little rice flour and adjust the consistency.
