Today I am going to share a recipe which is tasty, healthy & traditional recipe from the kitchens of Karnataka - Avi Kadubu hittu / dough for Steamed dumplings. We usually prepare Avi Kadubu during Ganesha Chaturthi / Vinayaka Chaturthi as offering to Lord Ganesha. These dumplings or kadubu's are prepared from rice flour dough stuffed with sweet or spicy fillings and then steamed.
For making this kadubu the important step is to get the kadubu dough right. We make kara Kadubu (spicy) and sweet kadubu using this dough. So with out wasting time let's get started with the recipe for dough...

KADUBU HITTU/ AVI KADUBU HITTU/ DOUGH FOR STEAMED KADUBU
Ingredients
¾ Cup - Water
¼ Tsp- Salt
½ Tsp - Ghee
½ Cup - Rice flour
Method
Step 1
In a pan on medium high heat add water, salt and ghee. Mix well

Step 2
Let it boil & reduce the heat to low. Add Rice flour and mix well so that there are no lumps. Switch off the heat.

Step 3
Cover it with a lid for 3 minutes or till the dough turns warm to a manageable heat.

Step 4
Now knead the dough for 5-6 minutes with hand till the dough comes together as smooth and soft dough.

Step 5
Take Lemon size dough dust it with some rice flour and roll gently and even to make a thin disk.

Kadubu dough is ready to be stuffed and steamed cooked.

Notes:
Keep the dough covered as it helps the dough to be moist and soft.
Keep the stuffing ready and roll the dough one by one and fill the stuffing immediately.
If the dough is breaking then it means that the dough is not kneaded well, so knead the dough well.
