Cluster beans or Gorikayi is full of Nutrients and it is great for Diabetics, beneficial for the cardio health, make Bone Strong, better blood circulation, and stimulates bowel movement. Basically I love Cluster beans Stir Fry it is healthy and tasty! Prepared with less oil. Palya is prepared with chopped vegetables where vegetables are sautéed in spices and topped with grated coconut and coriander leaves. You can make Palya/stir fry with almost all vegetables like beans, cabbage, tindora, raw banana, beetroot, etc.
It is great with chapati, roti or rice. It is very simple and easy recipe. Let’s see how it is prepared and get started…
Cluster Beans Stir Fry / Gorikayi/ JavaLikaayi Palya

Ingredients
1 Cup Chopped cluster Beans Stir Fry / Gorikayi/ javaLikaayi
1-2 red chilies
3-4 Tsp Grated fresh coconut
5-6 Curry leaves
A pinch of asafetida
1 TBSP Oil
½ Tsp Mustard seeds
½ Tsp Chana dal and Urad dal
Salt to taste
Lemon juice as needed
Water as required
Method
Step 1
Heat oil in a pan, add mustard seeds. Once they start to splutter add urad dal and chana dal and let them turn golden brown.

Step 2
Then add curry leaves & red chili. Once curry leaves become crispy add chopped cluster beans.

Step 3
To this add salt & mix well. Add water as needed and cover a lid, let it cook for 7-8 mins or till it becomes soft and gets cooked.

Step 4
Add grated fresh coconut mix well, then add chopped coriander leaves.

Step 5
Switch off the flame and add lemon juice mix well.
Serve it hot with chapati, roti’s or rice.

Notes
I have used ½ cup water here, you can adjust water as needed.
Palya is always dry and is not liquid like gravy or curry, so make sure all the water is evaporated.
You can replace cluster beans with any vegetables of your choice and prepare palya following the same steps.
