MANGO GINGER THUMBULI/ MAVINAKAYI SHUNTI THUMBULI

Thumbuli is a curd-based side dish served with hot rice. Thumbuli translates to cool & sour (ತಂಪು+ಹುಳಿ = ತಂಬುಳಿ), in kannada tampu means cool and huli means sour. Huli/Sour because for this recipe we use little sour curd.

There are many varieties of Thumbuli prepared from various vegetables/ greens. It is prepared with few whole spices roasted & ground with vegetables/ greens and fresh coconut, mixed with buttermilk or curd. Thumbuli is generally prepared mild and not spicy.

I had been to a function where I tasted Mavinakayi shunti thumbuli for the first time, it was mild not too spicy, not too sour very tasty and different. I knew it was thumbuli but was not sure which thambuli it was. When enquired, I got to know it was made from Mavinakayi shunti/ Mango ginger. Till then I knew mango ginger is used to prepare pickles but never knew it can be used to prepare thumbuli too... So, I wanted to try this recipe from a long time, finally one day I saw Mavinakayi shunti/ Mango ginger in market got it and prepared thumbuli it was just so easy and simple to prepare. So, Today I am sharing mango ginger thumbuli/ Mavinakayi shunti thumbuli recipe. It is very easy and quick to prepare and serve yet very delicious.

Ingredients

2 Tsp – Ghee

1 Tsp – Cumin seeds

1 Tsp – Peppercorns

2 – Green chillies

½ Cup – Grated fresh coconut

2 inch – Mavinakayi shunti/ Mango ginger (chopped)

½ Cup – Curd

Salt to taste

¼ - ½ Cup - Water

For Tempering

1 Tsp – Ghee

¼ Tsp – Mustard seeds

½ Tsp – Cumin seeds

Method

Step 1

Heat 2 tsp ghee in a pan, add cumin seeds, peppercorns, green chillies and roast all the ingredients well.

Step 2

Add chopped Mavinakayi shunti/ Mango ginger fry it for a minute and add coconut, mix well

Step 3

In a mixer jar add the roasted mixture with salt to taste and grind it into smooth paste with the help of curd.

Step 4

Now adjust the consistency by adding ¼ - ½ cup of water to the prepared thumbuli. In a pan heat 1 Tsp ghee, one it is heated add mustard & cumin seeds. Add the tempering to prepared thumbuli.

Mavinakayi shunti/ Mango ginger Thumbuli is ready to serve with hot rice.

Notes

I have used Mavinakayi shunti/ Mango ginger here you can use regular ginger/shunti to prepare thumbuli.

Thumbuli is usually little liquid in consistency than chutney so adjust the consistency as required, I have used 1/2 cup water.

You can use buttermilk instead of curd and skip adding water if using buttermilk.
