Notes
The proportion of chillies, tamarind and jaggery depends on the sweetness and tanginess of the pineapple. The pineapple I used for this recipe was more on sweeter side and less tangy, so I have used more tamarind extract and chillies to balance the taste.
You can grind a TBSP of cooked pineapple along with masala, this makes the gojju little thick and also enhances the taste.
If you like cinnamon then you can add 1/2 inch cinnamon stick and roast and grind it along with the masala. I personally don't like the flavor of cinnamon in this gojju so, I have skipped it.
