Flax seeds & Drumstick leaves Chutney Powder/ Pudi

Today I made one of the quite essential items which everybody loves at my home, which is....chutney powder/ಚಟ್ನಿ ಪುಡಿ. Chutney powder/ಚಟ್ನಿ ಪುಡಿ is basically served as condiment just like pickles. There are lots of variations of Chutney powder/ಚಟ್ನಿ ಪುಡಿ prepared and each variation tastes different and unique. There are lots of ways to eat them as well, for example: Chutney powder/ಚಟ್ನಿ ಪುಡಿ goes well with some hot steamed rice & little ghee or you can just add some coconut oil or ghee or curd to chutney powder and it is a tasty & healthy side dish for idli, dosa,rotti, chapati. You can even sprinkle it on bread toast.

Its an instant solution for all busy mornings...So today I am sharing one such variation of chutney powder - Flax seeds & Drumstick leaves Chutney Powder/ ಅಗಸೆ ಬೀಜ-ನುಗ್ಗೆ ಸೊಪ್ಪು ನ ಚಟ್ನಿ ಪುಡಿ. Both flax seeds & drumstick leaves have their own list of health benefits. So let's get started with this healthy and tasty recipe...

Ingredients

Flax Seeds - ¼ Cup

Moong Dal - ¼ Cup

Byadgi Red Chilli - 11

Curry Leaves - ¼ Cup

Tamarind - Small lemon size

Drumstick Leaves (Dried) – ¾ Cup

Jaggery - 1 Tbsp

Oil - 2 1/4 Cup

Mustard seeds – ½ Tsp

Asafetida - ½ Tsp

Salt to taste

Method

Step 1

Dry roast flax seeds till they start to splutter on a low flame & take it out on a plate, keep it aside.

Step 2

Dry roast moong dal till it turns golden brown on a medium low heat & keep it aside.

Step 3

Add red chillies and ¼ Tsp oil & fry till they become crisp. Keep it aside.

Step 4

Dry roast curry leaves till they become crisp on a low flame, keep it aside & warm tamarind. In a Mixer jar add all the roasted ingredients and dried drumstick leaves & pulse once, don’t make fine powder.

Step 5

Add jaggery & salt and blend to make coarse powder.

Step 6

In a pan add remaining 2 Tsp oil, add mustard seeds. Once it starts to splutter add asafetida switch off the flame. Add prepared chutney powder & mix well. Allow it to cool completely

Tasty chutney powder/pudi filled with flavours is ready.

Notes

If you don't have dried drumstick leaves but have the fresh ones then you can dry roast it along with curry leaves till they turn crisp and use it.

We use moong dal for this chutney powder as both flax seeds & drumstick leaves are heat for body and moong dal balances the heat.

This chutney power is little spicy, sweet, tangy and slightly bitter(due to drumstick leaves). You can adjust the ingredients according to your preference.

Store chutney powder in an airtight container. There is no need to refrigerate it and the best part is if all the ingredients are roasted right & stored properly, chutney powder stays best up to 6 months.
